Marinated Salmon Potato Pie

Marinated Spring Salmon in Hoisin sauce, ginger, garlic, sage, dill and cilantro basil for 2 hrs then poached the salmon (only cooking half way done cause will finish cooking in the oven in the pies) in water, white wine, onion, citrus spices and fresh herbs.

Boiled nugget potatoes with sweet potatoes then mashed with butter, sour cream, fresh dill, roasted garlic, sea salt and cracked black pepper.

Mixed the half cooked Salmon with the mashed potato mixture.

Spray inside of ramekins with non stick oil spray then lined ramekins with puff pastry dough. Fill the ramekins with salmon/potato mixture.

Cover ramekins with puff pastry dough. Pinching the cover dough to the dough in the ramekin making them seal together. Egg wash the puff pastry and cut a vent hole in top of puff pastry dough so cooking steam can escape while cooking.

Bake in 350 F oven for approx 20 min or until pastry is golden brown.

Great winter comfort food. My daughters loved it. Wife not much of a salmon eater.

Sorry Haida Gwaii I don't keep track of measurements when cooking. I don't follow recipe's. I just wing it when I make meals and go by flavors. If you are making the marinade I would just recommend adding little bit by little bit and keep tasting as you go to adjust what you like. The salmon barely needs any time at all in the poaching liquid cause it will finish cooking in the ramekins in the oven while the pastry is cooking. You can just buy the puff pastry dough already made in the super markets. It may be in the frozen food section. It's easiest to work with the dough very cold and almost frozen. I baked them in the oven at 350F until golden brown.

It's a very tasty dish and you can just use whatever ingredients you like added to the mash potato/fish mixture. I like using the smaller sized ramekins that are about a good size for a single serving.
