Humbolt Squid

Here's a recipe from an Australian friend...he catches them down south, so knew what to do with them:

Lattice cut it, then cut it into 1 inch pieces and dust it in cajun and flour, salt and pepper. Then wok toss it in butter and garlic, serve with some sweet chilli sauce on the side. Came out well. The squid tasted good and was tender.

If your in Sooke around lunch time head into The Edge. The new owner was the past executive chef at the Sooke harbour House for 14 years. He has squid & chips on the menu...its Humbolt and with his light batter/seasoning...very tasty. $11.50. If you prefer a burger, probably the best, biggest and cheapest around. $8.50
