Best Teriyaki Sauce for Salmon or Game

INGREDIENTS
2/3 cup mirin Japanese sweet rice wine (see Note)
1 cup soy sauce
2tsp Cornstarch blended into soya or Wine Before heating
4 1/2 teaspoons rice vinegar
1 teaspoon sesame oil
1/3 cup white sugar
7 cloves garlic, minced
1 tablespoon minced fresh ginger
1 dash red pepper flakes
black pepper to taste

NOTES: I have never made this with Mirin, only white vermouth and added extra sugar, about 1/4 cup.I think white wine with extra sugar will work too. I Double the recipe and keep it in the fridge for months.


DIRECTIONS
Combine all ingredients in sauce pan ( ensure cornstarch has been blended in) Simmer very low heat stirring Constanty about 5 mins.. COOL..Enjoy.

I lay a salmon fillet on foil then cover entirely with the sauce throw it on the BBQ...or use this sauce on your wild game, meatballs or whatever... VERY VERSATILE
 
Sounds tasty! I like the idea of the the red pepper flakes for a bit of heat.

I always make a large batch, I have kept this for over a month refridgerated...No problems..something about the alcohol...LOL
So you do not need to make it every time you want teriyaki
