Way over do, but finally tried my hand at the first round of bacon. I followed a dry rub recipe posted on this site. Turned out great. Trying a wet brine recipe next since I acquired some pure Apple juice from an orchard friend of mine! This bacon is from one of the he Berkshire I raised.

I can confirm the gunnels are lower. 30”ish I believe, I’ll have to measure. Like you mentioned, a railing is a must. I do like the fact you can clearly see over the roof while trolling.

How long ago was that? What model? I spoke to Bruce last year about foam in his current designs. He was against it and recommended creating air tight compartments between the bulkheads.

I just talked to another local apple juice orchard company... 1 cent per pound for apple mash from the press. Just covers the cost of his staff to load. Should be good!!
Thanks, I’ll keep that in mind. I’ve been in the farm equipment industry for almost 15 years now. All my feed, straw and hay is bought farm direct.
I will be expanding the pig pen to a 1/2 acre this winter. I meet with the breeder reserving berkshire piglets this weekend for February.

I rendered the fat for lard last night. I think it turned out ok. It’s white lol
