I am a member over on an aluminum boat site and this deceased member (drown due to an anchoring accident) shared a recipe that is quick and easy. I was thinking about him today and decided to post this up as it is really good and will help spread his legacy so to speak. He was an avid fisherman and a very helpfull individual that liked to share his knowledge and experiences.

"OK, Boys!

Here it is, good luck!

1. Take large fish filet or steak (striped bass, yellowtail, salmon, halibut, others -not tunas*) place is beep dish glass or ceramic plate/bowl.

2. Put one heaping spoon of hot/spicy soy bean sause on top of filet. If you like it really spicy go for two spoons.

3. Slice very thin fresh un-cooked ginger about an 1" square worth.

4. Slice very thin scallons (one full stauk).

5. Both go on top of the soy bean sause.

6. Two-Three spoons of Soy Sause over the top of the fish and other stuff.

7. 1/3rd a cup of Chinese cooking wine or your favorate cooking wine in deep dish around filet.

8. Two Table spoons of Virgin Olive Oil over the fish and spices.

9. Place plastic or glass cover over fish and dish and place in rotating microwave.
10. Start cooking at high for 10-minutes and then look out! Wait till you taste this fish! "

I've made it many times as it is fast and tasty. I know I know I never thought microwaved fish could be good but it is!

Give it a try.

Thanks for the post, I remember reading about Marty's passing after the incident happened. Such a loss to the fishing community.

Microwaving:- haven't tried fish in there yet ..but......I've tried big oysters microwaved ...Awesome!

Poke a few holes in them so they don't explode......nuke for short time......around 30 sec......if they need more you can hit the button again for a few seconds.

Trick is not to overnuke.

If done right....yum-yum.

That looks like a very good recipe that you posted...will try!

Not sure what that is..or do you mean black bean sauce

I'm pretty sure he's referring to Hoisin Sauce or Chinese BBQ sauce as it's sometimes called.;) eman

It is chilli's mixed with soya beans. You can find it in the asian section of most grocery stores.

This is the only fish dish (so far) that I will do in the microwave. I've had people try it and they don't believe me that it is microwaved.

I just cut and pasted the recipe from the AAB site and didn't see all the spelling mistakes Marty had made. Maybe a few wobbly's when he posted it:D.

Gotta try that chit. Still not sold on the nuker though.:p Maybe steamed in a bamboo steamer would work. Or a foil packet on the barby. Looks like a good recipe though.;) eman

Try the dishwasher...best steamed/poached fish ever! just wrap properly. Learned it from a chef at a 5star restaurant.

Yup, I have seen that method posted on several places in the past also.
Holmes, the closest you get to a Dishwasher, is when one of them bumps into you on the way by. LOL

Hey Holmes.. I was waitin for you to post.... I know you're in the industry...HAHA My chef friend does trout and any delicate white fish in a restaurant grade hobart. Try it!!!

It does work....At home with a 8-10 fish. They finish off it the drying cycle.

My parents used to cook chicken under the hood of the station wagen on our way from Vancouver to Oliver.

In my older boat, (a 22.5' Fiberform) that had an I/O with a doghouse cover on the motor, I used to cook entire meals on the motor.

I would cut up potatos, carrots, and onions and wrap them up in a double layer of alluminum foil with a bit of butter, salt and pepper. I would take one of our fresh caught fish and then BBQ it and then haul out the veggie pack and serve. Worked great.

Ryan, can you not handle the truth. It is not crazy. My parents really did cook chicken right next to the exhaust maniflold. Google it bet you will find others.

Did that on the manifold of the Kershaw Slave tamper I use to run in my younger days on the railway ...just make sure you put a hole in the top of the can..they blow up really good :)

I was skeptical but I gave it a shot and also served up bbq hali and pork tenderloin. The guests liked the micro snapper the best. Only microed for 7 min tho. 10 in my unit would have been too much.

@Sculpin: I am not sure about trying fish in the microwave. I have sort of reluctance when it comes to the micro, so I am very skeptical there too.
Btw - I love your recipe! Tried it out yesterday for my wife's birthday and I have to say that it is absolutely delicious. I cooked it for my wife and she was absolutely surprised that I was able to cook something like this "all by myself," but she loved the romantic atmosphere accompanied with the chocolate and wine gifts (http://www.serenatawines.com) I had for her including a necklace. So thanks man for such an incredible dinner! ;)

Lee Kum Kee ..CHILI GARLIC SAUCE is real nice for a salmon type soup.I remember bringing 4 litres of my salmon soup on a camping trip on the Skagit river years ago...it was gone in 30 minutes with 4 hungry guys..serve with a fresh Baquette with soft Butter

this turned out to be a two day recipe cause first I had to head over to Port Renfrew for the first trip of the year from there. I wanted to have some fresh white fish to try it on. Real nice weather over there and fishing was good for April, not as good as Tofino, but we came away with 3 nice springs and 3 lings too.

So I couldn't find the chili bean sauce, I'll try next time I'm off island, so I used chili garlic sauce. Also I was a bit leary of the microwave so I set it up to bake in the oven too. Real easy recipe for the fish and a side of rice and some stir fried baby bok choy.

I have to say this is a real good dish and the micro fish was as good or better than the oven dish. Can't wait to try it again with the chili bean sauce.

Good review firelight. It is easy and that is why I like it. I have baked it as well and like the microwave version better. It seems weird but weird in a good way lol.

Did this tonight for the first time with a copper rock fish. Couldnt find the black bean sauce at super store even though i found everything but itso i picked up a spicy garlic red chili sauce by the same company ( probably the same stuff firelight got).

Taste was amazing. Great work sir!

Tried this recipe out with halibut -- holy hell it's good!!! I couldn't bring myself to nuke the halibut, so I baked it in the oven at 350 degrees for about 45 minutes. Couldn't find the Black Bean so I substituted this stuff instead. We also did some veggies on a cookie sheet on the BBQ in Olive Oil. Nice heavy Cabernet Sauvignon to wash down the spices. Man that's good livin!!! This recipe IMHO makes the "Best of SportFishingBC" cookbook.

I made this tonight.
I used chilli garlic paste with halibut.

I never did find chili bean paste so if anyone ever sees it around the comox valley let me know. It looks great in sculpins pic with the little beans.

I only tried the oven ...next time I think I will be brave enough to try the micro.

Go for the microwave method Islandgirl. Like others have posted, it works:). I use ling and rock fish mostly for this one. I haven't nuked a halibut chunk yet lol.

Go to a TNT market. They would have it. Even my marketplace IGA near westwood plateau has it.

Used the microwave with a thick piece of salmon and this recipe and it turned out great.

Donalds market at hastings and nanaimo also has the chili bean paste, they have other locations as well. they also have a coconut curry paste that works very well with any white fish or chicken . I use a mix of the sambal olek, sweet thai chili sauce and black bean sauce when I do stir fried prawns or crab in my huge 24" wok on my 80,000 btu single burner stove out on the back deck, it is absolutely awesome. I'll post some picks and the recipe when I get some time.
