The wife saw this on tv the other day and made it...was great.
Cover sockeye fillet with grainy mustard then wrap with pancetta.
Bake in the oven or bbq and make sure to crisp up a little without overcooking.
The zing, fat and saltyness of the mustard and pancetta go very well with the sockeye.

Sounds great!
I've wrapped Salmon in Phyllo pastry with a Peanut butter/mustard sauce that was outstanding.

I just combined the two bit by bit with some Garlic and bit of Chile Pepper until it tasted right probably used some Lemon as well can't remember exactly.
